Cumpleaños Cooking: Tres Leches Cake

I found a delicious Tres Leches Cake recipe and wanted to give it a try, and it's really good! I want to make it more often with my kids. They enjoyed the cake too. I had to go slow and pay attention to what I was doing, as I had never done a homemade cake like this before. But, it turned out great.

Ingredients you need:

Unsalted butter at room temperature
6 large eggs - separated
1 cup sugar
1/2 tsp salt
1 cup all purpose flour sifted
1 can (14 oz) sweetened condensed milk
1 can (12 oz) evaporated milk
1/4 cup whole milk
2 cups heavy cream
1/4 cup confectioners sugar

The directions are below:

Preheat oven to 325 degrees. 

Butter a 3-quart baking dish. 

In the bowl that I used my metal mixing bowl with my handheld electric mixer, beat egg yolks and sugar on high speed until light and fluffy. 

This part was confusing but I figured it out - In another bowl, whisk egg whites and salt to soft peaks. Use a spatula, fold whites into yolks until almost combined. Sift flour over egg and gently fold into batter (do not overmix).

Spread your cake batter in your dish; I just used my normal 13x9 baking pan. Bake until golden and pulling away from sides of dish, which is about 23 - 25 minutes. You'll want it to cool for a bit before adding the icing to it.

For the icing:

In a medium bowl, whisk together the three milks; pour evenly over cake. Cover with plastic wrap; refrigerate at least 1 hour.

To serve, whip cream and confectioners' sugar. You can use a pastry bag or just ice it with the spatula like I did.
